I want to get started checking foods off my New Year’s To-Do list, and here’s our first one.
Oh, Pretzel Bread, how much I love you,
you are paired so well with any soup or stew.
So soft, so moist, so delicious in every way,
A little loaf of loveliness will make any person’s day.
To top it all off and create the best treat
smother your bread in some spicy mustard butter and eat eat eat!
OK, you don’t care about my food poems. FINE. Lets just make some delicious bread.
Pretzel Bread with Spicy Mustard Butter
makes 3 small loaves
Spicy Mustard Butter
- 4 Tbs soft butter
- 2 Tbs spicy mustard
In a mixing bowl or bowl of stand mixer, place yeast in 1/3 c. warm water until yeast is foamy. Combine milk with 1 c. hot water and add to the yeast mixture. Add in brown sugar, salt and melted butter and stir until sugar and salt dissolve. Slowly knead in flour. Knead until dough is soft and has nice elasticity.
Place dough in a lightly oiled bowl and allow to rise for 30-60 minutes. I like to punch it down and let it rise again for another 30-60 min, but you can move on to the next step now if you want.
Preheat oven to 475 degrees.
Bring 2-3 quarts of cold water to a rolling boil. Add baking soda to the water. Remove dough from bowl. It will shrink as you do this, but don’t worry. Separate dough into three balls and shape them how you want. Drop each loaf into the water individually and boil for 30 seconds, turning over once during this time.
Place loaves on a lightly greased baking sheet. Score the tops however you desire to make the signature pretzel bread marks. Make a nice deep cut. Sprinkle desired amount of kosher salt over surface of bread. The loaves will be sticky and the salt should stick to surface. Place bread in oven and allow to bake 10-15 minutes, or until loaves are nice and brown all over. Remove and allow bread to cool for 5 minutes.
To make mustard butter, just whisk butter and mustard together, until well blended.
Serve sliced bread warm with Mustard Butter! Yum.
