I had some delicious bacon wrapped poppers at a party last week. The stuffing was crumbled bacon, cream cheese, sour cream, and honey. IT WAS FANTASTIC! The sweet, spicy, salty combo was so so so good! I am planning on making these for a Thanksgiving Appetizer!

As far as getting the bacon cooked UNDER the pepper, simply twirl your bacon so it doesn't go directly under the bottom of the pepper- sort of like a barber pole stripe twirl to it.

To tone down the fire, either use a different paper, such as a Hatch type pepper ( bigger, too, so more to eat!), or add a thin slice of ripe avocado under the cream cheese misture. Avocado will smooth the hot down a bit.

One more bacon-wrapped goodie from Atame Tapas Bar in Berlin:

Dates stuffed with almonds and wrapped in bacon. Adding the almond gives a little more 'crunch', which is really good.
Pic Here

BTW, found this because of Being Totally Sweet in Chicago.

Just made these, mmmm. One problem I had was getting the bacon under the pepper cooked. I turned 'em over and predictably lost a lot of precious cheesy goodness. How to solve without massive cheese loss?

I'm definitely stealing this recipe.
As a bacon aside, I'm thinking we need to stop by More - that new cupcake place - for BLT cupcakes and bacon maple cupcakes.

Andrea-up here in Northern WI-the cheese stuffed peppers are battered and deep fried-just as greasy and tasty.
Also, my uncle's from Texas and he likes to pound a chicken breast flat, wrap it around a jalapeno pepper, then wrap bacon around that and grill-they call them White Wings.
I am reading a book right now called
Julie and Julia by Julie Powell. It is a light read but about a young woman cooking Julie Child recipes for a year and also blogging about her experiences and I couldn't help but think of you.
